Cheesy Garlic Bread
Ingredients:

1 baguette, horizontally cut in half

1 stick (8 tablespoons) butter, softened or partially melted

4-6 cloves garlic, minced

1-1.5 cups shredded cheese (any type you like)

optional 2 tablespoons fresh parsley, finely chopped

Instructions:

Preheat oven to 400 degrees. Place both sides of the baguette on a cookie sheet with the crust side down and the cut side up. In a small bowl, combine butter and garlic and spread evenly on baguette halves. Be sure to press the garlic butter down with the back of a spatula or spoon so the small pieces of garlic are pushed into the air pockets of the bread. Bake bread for 15 minutes and remove from oven. Change the oven setting to high broil. Evenly sprinkle cheese over the halves of bread and stick the cookie sheet back in the oven. Broil for 1 minute or until cheese has completed melted and shows a few golden bubble marks. Remove from oven and carefully slice bread in diagonal pieces and serve. Store remaining slices of bread in the freezer in a ziplock bag to use in the future.

Enjoy.

How delicious do these look? From Better Homes and Gardens, is a recipe for Fajita-Style Quesadillas, that would be perfect comfort food.

Ingredients

1/2 medium red or green sweet pepper, seeded and cut into bite-size strips

1/2 medium onion, halved and thinly sliced

1 fresh serrano pepper, halved, seeded, and cut into thin strips*

2 teaspoonsvegetable oil

4 6-inch white corn tortillas

Nonstick cooking spray

1/2 cupshredded Monterey Jack cheese (2 ounces)

2 thin slicestomato, halved crosswise

1 tablespoonsnipped fresh cilantro

Light dairy sour cream (optional)

Cilantro and lime wedges (optional)

Directions

1. In a large skillet cook sweet pepper, onion, and serrano pepper in hot oil over medium-high heat for 3 to 5 minutes or until vegetables are just tender. Remove from heat.

2. Lightly coat one side of each tortilla with cooking spray. On the uncoated side of two of the tortillas, divide half of the cheese. Top with onion mixture, tomato slices, the 1 tablespoon cilantro, and the remaining cheese. Top with remaining tortillas, coated sides up.

3. Heat a very large skillet or griddle over medium heat. Cook quesadillas for 4 to 5 minutes per side or until cheese melts and tortillas are lightly browned. Cut each quesadilla into 4 wedges. Serve warm and, if desired, with sour cream, additional cilantro and lime wedges.

From the Test Kitchen

*Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.

Be respectful, and remember every family is different, whether it’s someone from around the world to our neighbors next door we’re all celebrating in our own special and unique ways. It’s wonderful to respect others celebrations.

We found a wonderful website, which has the customs and traditions of Christmas celebrated around the world. It’s really interesting to read, and we’ve been open to learning more about other cultures, traditions, fortunes and misfortunes from around the world this season.

The best gift you can give and receive is you and your time. Give away warm clothes to families who may need them more than you, share your baked goods with someone who may not have much to eat this season because of a job loss. Take time to talk with and listen to your family and friends, and most importantly, be thankful your here, in the present to share peace, love, joy and hope.

Here’s a recipe we found for some Lemon Pie Tartlets from Magnolia Days:

Ingredients

1 package of 6 graham cracker tart shells

1 can (14 ounces) sweetened condensed milk

3 egg yolks

6 tablespoons fresh squeezed lemon juice

1/2 to 1 teaspoon grated lemon zest

Preheat the oven to 350 degrees F. Place the tart shells on a baking sheet. (Do not remove the crusts from the little aluminum pie pans)

In a medium bowl, whisk together the sweetened condensed milk and egg yolks. Stir in the lemon juice and zest. (The more zest the stronger the lemon flavor). Fill the tart shells with the lemon filling mixture.

Bake the tartlets for 15 minutes. Cool tartlets to room temperature and then refrigerate for at least 2 hours. Serve and enjoy.

Delicious!
